Zucchini Pasta with Creamy Basil Avocado Sauce

Lately I've been seeing a lot of spiralized veggie noodles on an a vegan parenting group page, so today I pulled out mine for some raw gluten-free vegan lunch. That sounds impressive for something that took less than 5 minutes to prepare.

2 zucchini, spiralized into noodles
1 avocado
2 cloves garlic
Juice from 1/2 lemon
Handful fresh basil
Garlic salt and nutritional yeast to taste

I blended everything except zucchini until smooth and tossed with my "noodles." My 3.5 year old not only loved the meal, but loved helping make it too. I let her turn the handle on the spiralizer and peel the garlic.

  2. I got mine on Amazon and if I could figure out my Amazon affiliate program I would link through there... But that's okay. Just Amazon. I think the brand name might be Spirooli?? I have seen them at a couple different high end health or cooking stores, but I bet Amazon is still the best deal.

    I don't cook the zucchini, but sometimes I will let it "marinate" or pickle, as it were in a sauce. We like sesame oil, pepper, garlic salt, and fresh squeezed lemon. YUM.

    I HAVE used the spiralizer to make yam or daikon noodles. The yam noodles I blanched really quickly so they wouldn't be too starchy. The daikon I actually just added to super hot miso soup and it made it like a great noodle bowl.

  5. While being electric powered, it is essential to maintain the condition of the slicer and keep it cool. In this day and age, most meat slicers are effective at being cool off during and after uses. Best electric meat slicer to buy online in India
